Protein Lemon Ricotta PancakesĀ

  • 1 cup ricotta cheese

  • 2 large eggs

  • 1.5 cup milk

  • 1 teaspoon vanilla extract

  • Zest of 1 large lemon

  • Juice of ½ lemon

  • 2 tablespoons melted butter (or neutral oil)

1. Mix Dry Ingredients

Whisk together:
  • flour

  • sugar

  • baking powder

  • baking soda

  • salt

  • 2 scoops Nutraflav unflavoredĀ protein

2. Mix Wet Ingredients

Whisk:
  • ricotta

  • eggs

  • milk

  • vanilla

  • lemon zest

  • lemon juice

  • melted butter

3. Combine

Pour wet into dry, fold gently, and stop when just combined.
If batter is very thick, add 1–3 tablespoons milk until it looks scoopable but not runny.

4. Cook

  • Medium–low heat

  • Grease lightly

  • Use ¼ cup per pancake

  • Cook 2–3 min per side
