Nourishing Chicken Noodle Soup (As Pictured)
Servings: 4–6

Cook Time: 35 minutes
Ingredients:
- 
1 Tbsp olive oil (or butter) 
- 
1 medium onion, diced 
- 
2 garlic cloves, minced 
- 
3 medium carrots, sliced into thin rounds 
- 
2 celery stalks, sliced (optional) 
- 
8 cups chicken broth (low-sodium if preferred) 
- 
2 bay leaves 
- 
1 tsp dried thyme (or 1 Tbsp fresh) 
- 
1 ½ lbs boneless, skinless chicken breasts or thighs 
- 
8 oz wide egg noodles 
- 
Salt and pepper, to taste 
- 
Fresh cilantro, roughly chopped (for garnish) 
- 
Optional squeeze of fresh lime juice for brightness 
Instructions:
- 
Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery (if using). Cook 5–6 minutes until softened. 
- 
Simmer chicken: Pour in chicken broth, add bay leaves and thyme. Place chicken into the pot. Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes, until chicken is cooked through. 
- 
Shred chicken: Remove chicken, shred with two forks, and return to the pot. 
- 
Cook noodles: Add egg noodles and simmer for 8–10 minutes, until tender. 
- 
Mix in protein: In a small bowl, whisk Nutraflav pea protein powder with about 1 cup of hot broth from the pot until smooth (this prevents clumping). Slowly stir this mixture back into the soup. Let simmer for 2–3 minutes to fully incorporate. 
- 
Season: Taste and adjust seasoning with salt and pepper. 
Serve: Ladle soup into bowls. Garnish with fresh cilantro and an optional squeeze of lime.
