Nourishing Chicken Noodle Soup (As Pictured)

Servings: 4–6
Prep Time: 15 minutes
Cook Time: 35 minutes

Ingredients:

  • 1 Tbsp olive oil (or butter)

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 3 medium carrots, sliced into thin rounds

  • 2 celery stalks, sliced (optional)

  • 8 cups chicken broth (low-sodium if preferred)

  • 2 bay leaves

  • 1 tsp dried thyme (or 1 Tbsp fresh)

  • 1 ½ lbs boneless, skinless chicken breasts or thighs

  • 8 oz wide egg noodles

  • 1 scoop Nutraflav unflavored pea protein powder

  • Salt and pepper, to taste

  • Fresh cilantro, roughly chopped (for garnish)

  • Optional squeeze of fresh lime juice for brightness

Instructions:

  1. Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery (if using). Cook 5–6 minutes until softened.

  2. Simmer chicken: Pour in chicken broth, add bay leaves and thyme. Place chicken into the pot. Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes, until chicken is cooked through.

  3. Shred chicken: Remove chicken, shred with two forks, and return to the pot.

  4. Cook noodles: Add egg noodles and simmer for 8–10 minutes, until tender.

  5. Mix in protein: In a small bowl, whisk Nutraflav pea protein powder with about 1 cup of hot broth from the pot until smooth (this prevents clumping). Slowly stir this mixture back into the soup. Let simmer for 2–3 minutes to fully incorporate.

  6. Season: Taste and adjust seasoning with salt and pepper.

Serve: Ladle soup into bowls. Garnish with fresh cilantro and an optional squeeze of lime.
